Sweet Potato Taco

Don't you just LOVE tacos?
I'm from Texas and we do tacos all day long!
However here in California, I've noticed everything is burrito this and burrito that. It's A LOT of food.
Portion sizes matter and so do the contents of the tacos & burritos! This is why I opt for tacos vs burritos. Have I ever mentioned I love food? Maybe my brand of Nutrition's My Life gave it away but I LOVE food! AND I don't want a bland taco, I want one that tastes really good and hits the spot!

I like to think of myself as a taco connoisseur. #truth I really do LOVE tacos. I love portobello mushroom tacos, I love fish tacos (save my fish tacos with mango salsa recipe for later here), and I eat a version of sweet potato tacos at least 3 times a week for my breakfast.
Yup, I eat an entire sweet potato 3-5 times a week most weeks!
Why?
Because I can load in a TON of healing properties that my body desperately needs.

Sweet potatoes in particular are great for migraines because they're a good source of B vitamins, they contain a TON of Vitamin A which is necessary for thyroid hormone receptor activation. Without receptors, the hormones don't have a place to attach... so I choose to eat my orange fruits and veggies daily for these two reasons. I FEEL the migraines/headaches creep back when I'm off my game so I know this works for me. (1).
The thing with being healthy, even with health condition or current imbalances is to find what works for you.
So, I write this tip of swapping out your tortillas every once in a while for an entire sweet potato to help you feel better!
I will say, this recipe's healing powers isn't just from the sweet potato but from what I add on top!
Just like sweet potatoes, avocados are also super powerful! Foods rich in antioxidants, like avocados, help protect against migraines because oxidative stress is a common cause of headaches / migraines (2).
Cilantro is great for grabbing onto heavy metals in the body and removing them (3).
So when you add in foods that have these healing properties like this, you're bound to start feeling better!
Whether you eat meat or are plant based, these sweet potato tacos are a must try!!
Note you can add WHATEVER toppings you like. The ones I'm mentioning in this recipe today are my go to ingredients!

RECIPE
INGREDIENTS
Sweet Potato
Avocado
Cilantro
Green Onion
Black Beans
Salsa
Red Bell Pepper or Tomatoes
Directions
1. Wash sweet potato.
2. Poke holes with fork or knife to allow for hot air to escape.
3. Wrap sweet potato in wet paper towel and place in microwave.
4. Microwave on high for 8-10 minutes depending on how big your potato is. (Note you can always bake these in oven on the weekend before to have them prepped.)
5. Once done cooking, carefully remove from microwave and cut open lengthwise.
6. Now add your toppings and amounts you prefer! They're all veggies so eat until you're full!
